Independientemente de su ubicaci\u00f3n geogr\u00e1fica, todas estas zonas cuentan con DO Cava. La principal zona de producci\u00f3n es el Pened\u00e8s, el 95% de la producci\u00f3n proviene de aqu\u00ed.<\/p>\n<h2>\u00bfC\u00f3mo se hace el vino espumoso?<\/h2>\n<p>El m\u00e9todo de vinificaci\u00f3n de los vinos espumosos se denomina: M\u00e9todo Traditionelle. Este es el mismo m\u00e9todo que el m\u00e9todo champenoise, pero con un nombre diferente.\n\nm\u00e9todo tradicional,\nEl m\u00e9todo tradicional es el m\u00e9todo cl\u00e1sico, en el que se realiza una segunda fermentaci\u00f3n en botella. Este m\u00e9todo se lleva a cabo en cinco fases.<\/p>\n<p><strong>Fase 1: elaboracion de vino base.<\/strong><br \/>El en\u00f3logo elabora vinos de primera base. Estos son casi siempre blancos, para el cava suelen utilizar las uvas Macabeo, Parellada, Xarel.lo.<\/p>\n<p><strong>Fase 2: assemblaje<\/strong><br \/>El en\u00f3logo hace el assamblaje, es decir, mezcla los vinos base. Intenta asegurarse de que el vino tenga el mismo sabor tanto como sea posible a lo largo de los a\u00f1os y limitar las diferencias de cosecha mezclando tanto como sea posible.<\/p>\n<p><strong>Fase 3: embotellar, segunda fermentaci\u00f3n y maduraci\u00f3n.<\/strong><br \/>El assemblaje se embotella. Luego se le agrega el licor de tiraje; una mezcla de vino, az\u00facar y c\u00e9lulas de levadura seleccionadas. El en\u00f3logo cierra la botella, a menudo con una tapa de corona. El az\u00facar pone a trabajar las nuevas c\u00e9lulas de levadura y se inicia una segunda fermentaci\u00f3n en botella. Sin embargo, el di\u00f3xido de carbono no puede escapar, lo que hace que se formen burbujas en el vino. Una vez que las c\u00e9lulas de levadura han hecho su trabajo, mueren y forman una capa de sedimento en la botella; la mentira. A medida que el vino madura m\u00e1s tiempo en la mentira, su calidad aumenta y tambi\u00e9n se vuelve m\u00e1s suave en sabor. Un cava joven debe madurar al menos 9 meses, un reserva 15 meses y un gran reserva 30 meses.<\/p>\n<p><strong>Fase 4: sacar el sedimento de levadura (lie)<\/strong><br \/>Despu\u00e9s de la maduraci\u00f3n se traslada  el sedimento de la levadura al cuello de la botella. Para ello, el en\u00f3logo coloca las botellas en un pupitre. Se trata de un rack en el que se colocan las botellas con el cuello hacia abajo. Las botellas se giran regularmente aqu\u00ed, mientras que la botella tambi\u00e9n se gira un poco m\u00e1s al rev\u00e9s. Esto se llama remuage y requiere mucha mano de obra.\nEs por eso que la gente usa cada vez m\u00e1s una paleta giratoria(pupitre). Las botellas se colocan en una especie de jaula en forma de cubo, que realiza el mismo movimiento que con el remuage individual.<\/p>\n<p><strong>Fase 5: Quitar el dep\u00f3sito, rellenar la botella y determinar el estilo de sabor.<\/strong><br \/>El cuello de la botella pasa brevemente por un ba\u00f1o con un l\u00edquido a menos 20 \u2070 C. El sedimento se congela, se quita la tapa o tap\u00f3n corona y la presi\u00f3n del di\u00f3xido de carbono hace que el tap\u00f3n de hielo con el sedimento salga disparado de la botella. Se pierde una peque\u00f1a cantidad de vino. Di complementa al en\u00f3logo con licor de expedici\u00f3n. Una mezcla de az\u00facar disuelta en vino, complementada con \u00e1cido c\u00edtrico y posiblemente un destilado para aumentar el contenido de alcohol. Cada bodega tiene su propia mezcla para esto.
